Spicy mango & lime chicken tacos

Who was it that invented food trucks? Especially those serving quick, perfectly flavoured, spicy little bites of food wrapped in something delicious? Who was that genius mastermind? My hat off to them, because all of the above describe one of my favourite things to eat and pretty much sum up the perfect summer bite. More specifically, tacos. Spicy mango & lime chicken tacos even more specifically. The one taco recipe I’ve shared here before is filled with flavours and veggies and this one follows the same principles: lots of freshness, lots of colour, a little heat- pretty much all you need for that perfect bite. Marbled egg, pickled carrot & asparagus rice salad

Easter is practically here, you guys! I realised this just a few days ago and I have to say, it really caught me by surprise- it’s so early! This year there seems to be a mahoosive gap between Catholic and Greek Easter and since I’ve been accustomed to the latter, I guess I really dropped the ball on the whole Easter situation. Still, since I LOVE celebrations of any kind at absolutely any time of the year, I’m definitely up for a speedy seasonal dish, filled with delicious flavours and bright springy colours:  hello, marbled egg, pickled carrot & asparagus rice salad! Soy sauce & lime seeds & nuts

Seeds and nuts are two of my favourite ingredients. I almost always grab a combo of both when I’m on the go and only about a handful can keep me full without weighing me down. They’re also perfect for topping salads, rice, couscous and quinoa dishes- I love their versatility & crunchy texture and I’m always amazed at how easily they can transform almost any dish, savoury or sweet. Nuts are the perfect addition to homemade granola and when combined with pure olive oil and cocoa powder, they make for the smoothest, healthiest, most delicious spread. Likewise, seeds are not only delicious on their own but also great when added to quick breakfast oats, a simple crust or a hearty winter soup. [READ MORE]

Lemony & spicy eggs en cocotte

The last week or so has been kinda different; Mike’s in LA on business (and by business I mean the freakin’ OSCARS, for which Stutterer, the little gem he did the cinematography for, has been nominated WON AN ACADEMY AWARD! Wait, what?!?) and I’m in London, up to my eyeballs in work . Since he left, things have been infinitely more quiet, the house impressively decluttered and my days significantly less fun. Parmesan, za'atar & sesame straws

Throughout the holidays, one of the things I enjoyed the most about the various dinner we attended or hosted at home was the starters. Not the meat, which was in overwhelming abundance, not the wine, which was flowing non stop, but the little bits and pieces available before the actual meal: different kinds of cheese paired with fresh and dried fruit, beautiful charcuterie, smoked salmon- they were all not only delicious enough to almost keep me from enjoying the rest of the meal, but also so pretty. Favourite spices

I often think that cooking is like putting together an outfit. Your basic ingredients are the garments and spices are all the little things that make an outfit special, like a great hat, a colorful scarf, a beautiful simple belt, a distinct piece of jewelry, a nice deep red lipstick or a killer pair of pumps. Your outfit would be ok without them, but, adding one or more of those accessories instantly elevates it and makes it shine. Same with spices: you can do without them, but honestly, why would you when just a pinch of this and a dash of that can make a simple dish all that more interesting and appetising? [READ MORE]

Beer & cheese baked nachos-4

Baked nachos is one of my favourite things in the world.  Yours too?  Hi, nice to meet you.

Beer & cheese baked nachos

Tortilla chips are grand, melted cheese is king- and the two combined is one of this things dreams are made of.  My first encounter with them was at a movie theater.  I’m usually a pop corn kinda gal, but once I tried nachos, I was fell in love with the crispy, crunchy chips, the non-descrip orange cheesy substance poured all over them and messiness of it all.
