I am endlessly in awe of the fresh produce available in spades during spring and sumer. All the captivating colours and intoxicating smells, all the different textures which beg to be used in different dishes, usually requiring very little handling at all. I am in awe indeed and I miss them when the warm months are gone. When summer approaches and along with it come all the beautiful seasonal fruit, peaches somehow escape me at first. I go crazy over strawberries, blueberries, blackberries and raspberries; I’m smitten with nectarines and then, in the middle of said love affairs, I see peaches. And every time, I just can’t explain why the escape me- especially the small, flat ones. Tarts are one of my favourite things to eat, throughout the year and at all times of the day. To begin with, I love the different textures: the crumbly, at times crunchy exterior, usually bursting with buttery deliciousness and the usually soft, even juicy filling. Throughout the holidays, one of the things I enjoyed the most about the various dinner we attended or hosted at home was the starters.
