After spending a super fun evening with friends from all over Europe, I woke up today to the confirmation that the times they are a-changing and are in fact bat shit crazy. I don’t know about you, but I’ve been having this WTF feeling for the better part of a year now. I mean Europe is a hot mess, right? Things in Greece have been bad for quite some time now, the shit’s about to hit the fan here in the UK as well, the States are not doing too swell either.

There’s so much to think about and endless debates and conversations to be had; there’s gonna be uncertainty and worry. But that’s not all there’s gonna be, that’s certainly not all there is. The world around us is changing, and it’s precisely at times like this that we need to breath in and out, pause and be appreciative of what’s dear to us, be thankful and calm. [READ MORE]

Who was it that invented food trucks? Especially those serving quick, perfectly flavoured, spicy little bites of food wrapped in something delicious? Who was that genius mastermind? My hat off to them, because all of the above describe one of my favourite things to eat and pretty much sum up the perfect summer bite. More specifically, tacos. While the weather in London continues being very British (sun! black clouds! tropical style night rains! humidity! sun again!), in Greece summer has officially arrived. It’s hot and sunny and my family and friends are already off to the beach. No biggie. I’m not jealous at all. Like really. Avocado, nectarine & pistachio quinoa salad

One of the things I love more about the summer months is how my appetite and cooking changes. When it’s cold, I enjoy heartier, somewhat heavier dishes and I’m happy to spend hours in the kitchen making soups, bread or decadent desserts. As soon as it gets a little warm though, all I crave is speedy, refreshing meals with light textures. I mostly lean towards salads and I’m always impressed by the countless combinations one can come up when it comes to fresh vegetables and fruits. So, these days, that summer has finally arrived here in London (I mean, kinda- rain still keeps us on our toes) my cooking is almost exclusively dedicated to all sorts of things light, colourful and quick. Summer is finally making an appearance in London- albeit somehow reluctantly. I’m looking forward to things slowing down a little and to spending the weekend relaxing, catching up with friends and testing some season-appropriate recipes. Yesterday was my mom’s birthday. For the past ten years or so, I’m not around to celebrate with her, but I always try to mark the occasion by making her a delicious dessert. Even though she’s not around to enjoy it, I’m always very happy to do it (and eat it, of course). Pasta is probably my favourite thing to eat; it’s easy, simple and delicious, aka the definition of comfort food. This past week has been very busy, filled with long business calls, endless emails and an overwhelming desire for the weekend (and sunny weather) to come already. On the plus side, I’ve been experimenting with a couple new no-churn ice cream flavours, have fallen hard for savoury tarts tatin (recipe coming soon) and decided to give my beloved vampire TV dramas a rest and go back to old favourites only to discover that Rear Window gets better every time and His Girl Friday helps my crush on Cary Grant to remain in tact.
