I met Nassia about a year ago through mutual friends. I was immediately taken in by her energy, social skills and enthusiasm about food. That first night we met ended very appropriately (and very late) with pizza at Voodoo Ray’s (one of Nassia’s favourites)- were we had our first of many conversations about ingredients and trends, food porn and London, favourite childhood food memories and new-found exciting dishes.

Today’s soup is the love child of two of my favourite recipes. This beautiful pea & mint winter soup was meant to be with this colorful, summery gazpacho. It was love at first sight, for real. And so it was for me too- how could it not? Sweet vegetables, tons of delicate but lasting flavour, a silky texture- all coming through with each refreshing spoonful. Sunday is Father’s Day and since I love compiling lists of every short, I thought I’d round up some gift suggestions. My father is quite rarely mentioned here. He almost never talks about food- he barely discusses the recipes I share on the blog, although he’s told me over and over again that he likes the stories I write. Sometimes, he also comments on mistakes he finds- which doesn’t surprise me at all. When I was in College, I had once written him a super heartfelt, emotional letter, to which he replied in an equally heartfelt and emotional manner, while also enclosing in the envelope my own letter, with corrections on it. During and after my frying session the other day, I realised that one of the reasons I don’t fry things often, is because fried food is largely considered bad for you. And yeah, I get it, all this oil, absorbed by whatever it is you’re cooking, is not the healthiest thing. My meals during the week are on the light side, varying from usually raw vegetables, cooked brown rice, quinoa or couscous, to steamed or baked fish and roast chicken, soups in the winter and salads during spring and summer.
